How to Keep Rice Fresh for Longer

When stored in airtight containers in a cool, dry, and dark place, rice can stay fresh for months without spoiling. During the summer, you can use the refrigerator or freezer to prevent moisture and insect infestation. Dividing large quantities of rice into smaller portions helps preserve freshness every time you use it.

The Importance of Washing and Soaking Rice

Before cooking, rice should be rinsed several times with cold water to remove excess starch, which helps the cooked rice turn out light and fluffy with well-separated grains. Soaking it in water for 15–30 minutes allows the grains to absorb moisture evenly and cook more uniformly; however, soaking it for too long increases the risk of the rice becoming mushy.

Choosing the Right Type of Rice

The type of rice you use for each dish is different, and the right choice has a direct impact on flavour. Baldo rice is ideal for classic Turkish pilafs because it stays nicely separated when cooked. Jasmine rice, with its slightly sticky texture and pleasant fragrance, pairs perfectly with Thai and other Asian dishes. Basmati rice, with its long grains and aromatic taste, is especially preferred in Indian cuisine. For desserts, short-grain and starchy rice varieties are the best choice, as they help achieve the desired thick and creamy consistency.

Using Leftover Rice

Leftover rice can be turned into vegetable pilaf by sautéing it with vegetables, into rice pudding by adding milk and sugar, or into fried rice by cooking it with soy sauce and egg. It should be stored in the refrigerator for 2–3 days and thoroughly reheated before serving.
