Ingredients
5 cup Basmati Rice
2 1/2 cup fresh Mango chunks
3 3/4 cup fresh pineapple chunks
1 2/3 cup raisins
100 gr of peeled prawns
2 1/2 cup chopped cucumbers
2 1/2 chopped stalks celery
3 cup shredded coconut
10 cup vegetable stock
2 1/2 tsp tumeric powder
1/4 cup of toasted almonds slice
Directions
For the dressing use 4 tablespoons of lemon juice, 1 cup of honey, 10 tablespoons pineapple juice, 5 gloves chopped garlic. Add salt and black pepper to taste. wash rice thoroughly. In a pan, bring stock and tumaric powder to a boil. Add rice. Simmer until rice is cooked. Whisk dressing ingredients together in a large bowl. Taste and adjust seasoning. In bowl, mix rice with pineapple, mango, almonds, raisins, celery and cucumber. Gently fold the dressing. Garnish almonds, coconut prawns and serve. You can add slices of radish an pieces of Nori too, if you prefer.
