Ingredients
5 cups of Mahmood Basmati Rice
3 tbsp oil
4 eggs
4- 5 sliced shallots
2 cloves of chopped garlic
1-2 sliced and deseeded red chillies
2 tsp roasted dried shrimp paste
5 150g peeled prawns
200g leftover cooked chicken, lamb or beef (diced)
250g slicedcabbage
1-1½ tsp salt
1 tbsp sweet kecap manis (Indonesian soy sauce)
Sliced cucumber and tomato to garnish
Optional Accompaniments
1 piece Javanese fried chicken
1 beef satay
Crispy fried shallots (sprinkle on top of nasi goreng)
Sambal kecap
Krupuk (Shrimp Crackers)
Mixed vegetable pickles
Instructions
Prepare the optional accompaniments – Javanese Fried Chicken, Beef Satay, Crispy Fried Shallots, Sambal Kecap, Krupuk and Mixed Vegetable Pickles.
Lightly grease a non stick skillet with little oil and fry the eggs son the sunny side.
Remove from heat and set aside.
Heat the wok and add oil over medium heat.
Stir-fry the dried shrimp paste, minced chilli. shallots, garlic for 1-2 minutes.
Add prawns and stir-fry until nearly cooked and then add cabbage and cooked leftover meat.
Continue to stir-fry until cabbage is slightly wilted.
Increase the heat to high.
Add the rice, salt and Indonesian soy sauce and stir-fry for about 2 minutes until all the ingredients are mixed and heated well.
Remove from the heat.
Transfer rice to a serving platter, top with the fried eggs and arrange the accompaniments around the plate.
Garnish with cucumber and tomato slices and serve.
