Thai Chicken Thighs

Ingredients

 

8 bone-in, skin removed chicken thighs 1/2 cup salsa

1/4 cup peanut butter

2 tablespoons lemon juice

2 tablespoons soy sauce

1 tablespoon chopped seeded jalapeno pepper

2 teaspoons Thai chili sauce

1 minced garlic clove

1 teaspoon minced fresh ginger root

2 sliced green onions

2 tablespoons toasted sesame seeds

Hot cooked basmati rice

 

Directions

 

Place chicken in a slow cooker. Mix the salsa, peanut butter, lemon juice, soy sauce, jalapeno, Thai chili sauce, garlic and ginger in a small bowl and pour over chicken. Cover and cook for 5-6 hours on low heat until chicken is tender. Sprinkle green onions and sesame seeds. Serve with rice if desired.
