How to Cook?

Add the rice to boiling water; add salt and olive oil. Cook over low heat until the rice is parboiled.
Add butter to a pan; add the onion and sauté for 3–5 minutes.
Add the pre-boiled meat; sauté briefly. Add the dried plums, salt, and black pepper; cook until the onions are soft. Remove from heat and set aside.
Drain the boiled rice; add turmeric and diluted saffron, and mix well.
Grease the baking dish and flatbreads; line the bottom and sides of the dish with the flatbreads.
Add a layer of rice; spread the meat mixture in the middle and arrange the dried fruits. Add another layer of rice, drizzle the remaining butter, and cover with the flatbreads.
Bake in a preheated oven at 180°C for 1–1.5 hours until golden.
Remove from the oven and serve.

3 cups Mahmood Basmati rice
6 cups hot water
500 g diced meat
4 tbsp butter
10 pieces flatbread (lavash)
1 tbsp olive oil
1 cup dried plums
1 cup dried apricots
1 cup raisins
1 large onion
1 tsp saffron
1 tsp turmeric
1 tsp black pepper
2 tsp salt
